Sugar Kisses

Besides being cute, these little biscuits are light and delicious. They also are very nice to give as a gift.

Ingredients for Biscuit

1 cup plain flour
1/8 teaspoon salt
1/3 cup (90g) butter
1/4 cup (60ml) light (single) cream
1/3 cup (50g) confectioners' sugar, to dust

Ingredients for Filling
1 cup confectioners' sugar
1 table spoon butter, softened
1 tablespoon light (single) cream
1/2 teaspoon vanilla extract/vanilla essence
few drops of red food coloring (or colour of your choice)

Mix the flour and salt in a large bowl. Mix in the cream and then the softened butter until all the ingredients are thoroughly combined. Dough should be soft and not crumbly at all. Place the dough on a small plate and refridgerate for 30 minutes. Meanwile preheat the oven to 375 degrees fahrenheit or 190 degrees fan-forced oven. Line baking trays with baking paper. After 30 minutes is up, take the dough out of the fridge. Roll out the dough on a lightly floured surface (use a baking pin/rolling pin that is also lightly floured to help you). Use a 1 and 1/2 inch (4cm) cookie cutter to cut out the cookies (or use a cookie cutter design or your choice that is similar to this size, eg. small love heart, small star, small flower, small circle etc). Gather the dough scraps, re-roll, and contuinue cutting out the cookies until all the dough is used. Transfer the cookies to the baking trays, spacing them 1 and 1/2 inches (4cm) apart. Bake until just golden at the edges, 8-10 minutes. Transfer to racks to cool

Method for Filling
Mix confectioners' sugar, butter, cream, vanilla and food coloring of your choice in a bowl. Stick the cookies together in pairs with the filling. Dust with the confectioners' sugar

Notes for Filling
Don't overdo it with regards to the amount of filling you put between the cookies. Remember they are small and don't need that much icing to sandwich them, otherwise it will pour out and get real messy!

The Festive Season: Rum Balls

We all know it's coming up to Christmas, so why not try this recipe to impress your family and friends during this festive season? Everyone loves rum balls and they are great as little gift idea.

250g Milk Arrowroot [Arnott's brand] biscuits (or use Arnott's Nice biscuits if you want it sweeter
3 tablespoons cocoa powder
1/2 cup desiccated coconut + coconut for coating (allow for 3/4 cup)
395g can of sweetened condensed milk
1/2 teaspoon vanilla essence/vanilla extract
2 tablespoons rum
2/3 cup sultanas (or you can use mixed fruit)

Finely crush the biscuits in a food processor (or blender) along with the cocoa. For those who used the blender: pour the crushed biscuits and cocoa mixture into a mixing bowl and add the remaining ingredients (except for the coconut coating). Mix the ingredients together. If you used a food processor, simply add the 1/2 coocnut, condensed milk, vanilla and rum to the mixture and process until it is well combined. Add sultanas and process on a low speed until just combined. Place mixture in your fridge (or freezer to speed up the process) for about 30 minutes or until you think it firm enough to roll into balls.
Note: Do not omit this step - the rum balls need to be firm in order to be rolled, otherwise they will not hold their shape nicely! Meanwhile, take a plate or flat board and sprinkle coconut for coating onto it. Take the mixture from the fridge and take a spoonful of the mixture and roll it into balls. Then rolls the balls in the coconut on the plate. Store in an airtight container in the refrigerator.
